Hojaldro - Pan de Muerto

Soft, aromatic, and symbolic, Pan de Muerto is a traditional sweet bread made to honor loved ones during Día de Muertos. In this workshop, we’ll prepare the dough from scratch, shape it with symbolic dough “bones,” and learn the meaning behind its design. Because the bread needs time to rise, we’ll complete the main steps in class and provide online access to finish baking at home - just in time for your altar or gathering.

This workshop celebrates traditional Mexican cooking with Enchiladas de Mole - corn tortillas filled with chicken and topped with a rich, historic mole sauce of chiles, chocolate, and spices.
We’ll serve them with Arroz a la Mexicana, a savory rice with garlic and vegetables, and a light Chicken Consommé made from the same broth, finished with herbs and lime.

Get ready to master one of Mexico’s most iconic dishes - Carnitas! Originating in Michoacán, carnitas are pork slowly cooked in their own fat with orange, garlic, and spices until tender and crispy.
In this workshop, we’ll cover traditional techniques, plus toppings like salsa, pickled onions, and guacamole. You’ll prep key steps in class and get follow-up instructions to finish at home. Perfect for parties or a flavorful night in!
Each class at Mestizo Academy is thoughtfully planned, with many ingredients sourced specifically for the menu. Due to the small class sizes, the use of specialty ingredients, and the preparation involved, class fees are non-refundable and non-transferable if cancelled within 5 days of the class date.
Cancellations made more than 5 days in advance may be transferred to another class, subject to availability. A 25% non-refundable service fee applies to all transfers. Alternatively, if unable to attend, participants are welcome to send a friend or family member in their place -please provide their name in advance.
Transfer requests must be made within 7 days of cancellation and are only valid if the new class has space available.
If a participant does not attend or cancels within the 5-day window, the full class fee will be charged, as it is not possible to fill the spot on short notice.
In the rare event that a class must be cancelled or rescheduled due to weather, emergencies, or unforeseen circumstances, participants will be notified at least 3–5 hours before the class begins. If the new date is not suitable, credit will be issued toward a future class.
